One special treat that I remember having while growing up was homemade ice cream, and I always loved my Mom's Vanilla Ice Cream the best! Our family actually hasn't made homemade ice cream in a long time, but with the hot temperatures we have been suddenly having, I have added the ingredients to the grocery list and am pulling out the machine soon! There is nothing that says summer more than the sound of the ice cream maker churning in the middle of the ice and salt (and the smell of chlorine in a swimming pool!)! Mom's Vanilla Ice Cream
1 cup sugar
3 eggs - beaten
1 can sweetened condensed milk
1 can evaporated milk
1 1/2 Tbsp. vanilla
Milk
Rock salt
Ice
Mix first five ingredients well. Pour into cylinder and fill the cylinder to the line with milk. Follow the directions for your ice cream making machine as to how much salt and ice to use. I always put an inch of rock salt on the bottom, fill to the top with ice and cover ice again with rock salt, but your machine may suggest something different.
